At East Coast Sauces, we do things differently. Our focus is always flavor first—bold, fresh, and crafted with care in small batches. What does that mean for you? Real ingredients, no shortcuts, and the occasional question like:

The Beauty of Small-Batch, All-Natural Hot Sauce
Unlike mass-produced sauces loaded with preservatives, dyes, or flavor extracts, our lineup is made from the good stuff: real peppers, fresh produce, and thoughtful seasoning. Aside from one of our sauces that uses Xanthan Gum for consistency (a misunderstood, but totally awesome thickener), we keep things clean and simple.
That’s why you might see a few natural quirks when you crack open a bottle:
Separation: Without stabilizers or emulsifiers, some of our sauces (especially buffalo) may separate a little in the bottle. Just shake it like you mean it.
Color Variation: Peppers are like snowflakes—no two are exactly alike. That means batches can vary slightly in shade, depending on the harvest. It’s not a flaw—it’s nature.
Thickness: Some sauces, like our 814, are thicker due to a higher fat content. That richness brings insane flavor. If it’s not pouring easily, try the ketchup technique—shake, tap, or even warm it up for a smoother pour.
"Do I need to refrigerate this?"
We get it all the time. At ECS HQ, our open bottles live on the counter—but storing them in the fridge helps preserve their peak flavor for longer (up to a year). Sauces that are more vinegar-forward are naturally more shelf-stable, but chilling your bottles is always a safe move—especially since we don’t use artificial preservatives.
That said, if you’re anything like us, that sauce won’t make it to the fridge anyway.
